I am doing it... progress folks... and another recipe !

I have not faltered from the diet plan! Walking briskly every other day for 30 minutes.... and drinking a TON of water! I will weigh this weekend and see if I notice just the slightest of difference and let ya'll know...

I cooked this last night... TALK ABOUT SIMPLE AND FAB!
How can you resist a crockpot recipe?

LAZY DAY SOUP
1 lb hamburger-browned with onion/salt/pepper
3 cans campbells minestrone soup (the regular white/red can...dont try and get creative trust me!)
1 can corn---juice and all
1 can rotel tomatos
1 can ranch style beans
thats it!!! brown hamburger with onion, salt, & pepper. open the 6 cans and dump in pot. stir it up and just let it cook itself. i do add some water and sometimes a small can of tomato sauce because i like it a little saucy...for dipping crackers or yummy rolls. can be made in crockpot all day or on stovetop.

(I added beef broth and water for a more saucy effect....)
ENJOY !
Oh, and I topped mine with mozzarella cheese, but cheese is like my best friend - too each his own...

Did you know.....

I am the queen of making salsa? Green sauce and red sauce.... can't touch this !!!!!!!!!!!! LOL! I have hispanic folks tell me it is the best they have ever tasted - that I should bottle and sell it... well, I decided to do the full on out MexiCAN dinner for my family last night which included BOTH salsas.... talk about a treat...

You can have tacos, chalupas, taco salad, burritos - the choices are yours to make... just EAT!

I call it my "gringo salsa"... no one be offended .. means white people and/or light skinned....
GRINGO Salsa Recipe:
avacados (I normally use 3-4)
jalepenos (start with one and see what you can take - taste as you go along)
3-4 garlic cloves
1/2 to 3/4 YELLOW onion
cilantro (a use a bunch - it is my best friend)
juice of a lime and salt (again - taste to your liking)
Sour cream.... maybe 1/4 cup or more...
Water - to give it a runnier consistency...

Blend in blender and wah lah - heaven in your mouth...
Seriously folks, I wouldn't lie to you !


My red salsa... been told it is better than Pappasito's... ;)

Red Salsa Recipe:

7-8 ROMA tomatoes
1-3 jalepenos (start with one and see what you can take - taste as you go along)

THESE above two ingredients I boil together or fry together PRIOR to adding to the rest of the ingredients... so you can serve it warm!

3-4 garlic cloves
1/2 to 3/4 YELLOW onion
cilantro (a use a bunch - it is my best friend)
salt...(to taste)

Again, simplicity and HEAVEN!

3 week challenge...................

Okay, today I walk 4 miles, and/or brisk walk 30 minutes - whichever comes first.... are we in this?

Have you been drinking your daily dose of water? I have been drinking around 90 ounces... but still NOT what I should be consuming... it is okay... I am at least TRYING!

Weather.....

This is absolutely crazyThis is what living in Texas is like.. our ENTIRE Christmas holiday weekend was was and really cold.... woke up this morning to ice
; however, when I leave work it will be warmer.....

Check out the future forecast... 70's by mid week? Insane !


Oh, and back to the diet thing... had 84 ounces of water today and I feel like I weigh 400 pounds... my stomach is protruding like crazy.... oh lawd help me !

Simplify...

So Christmas is said and done with and now we approach New Year's.... What did everyone do for Christmas? Was it an enjoyable one? Hectic? Dramatic? Peaceful? I must say....this year was the FIRST year in my life that I spent Christmas with just myself and my husband (who-btw will be writing really soon on the blog)... it was serene, peaceful, and just downright lovely. I worked on Etsy a little bit because I am so excited about my new home decor collections... we watched a movie.. went and ate at the local buffet (yes, they were open and I FELT HORRIBLE going, but I went anyways)... after that we checked out a couple Christmas lights and went home. SIMPLE SIMPLE SIMPLE...

Sometimes that is the best way to approach life. With simplicity. I know it can be terribly hard when you have family, especially children, but it makes life easier... Yes, we will always have hardships, heartaches, and/or bad things happen... but after the storm comes the sun.. and better things to come. Just think about it... De-clutter your home... plan ahead (dinners, clothing, etc)... think of ways to make your life easier and simpler. I saw this on Pinterest (yes, my name is Courtney and I am an addict) and thought what a great idea... so this can kind of be your first step in the direction of simplying your life... finding more time for the GREAT stuff.... but LAWD whatever you do, don't let it interfere with walking... and if it does, lets go with plan B! LOL!


I am at work today, and I am sure it will be a long, sllllooowwww week, but I must get back to my duties and bid you adieu....(See I made this SIMPLE yet sweet...) Smooches !

My heart just skipped a beat....

and I feel "Almost Famous"...
